Who loves Mexican Rice? I do! And so does my family. In fact, my mom's Mexican rice is probably my son's favorite food ever. And nobody makes it better than my mom does...at least, until now!

I don't know how many of you know how to make Mexican Rice, but one of the things that makes is soooo tasty is the fact that you fry the rice in about a quarter inch of oil before you steam it. Which means that, since joining Weight Watchers over 10 years ago, I almost never make it (it's almost double the points of regular steamed rice). And when I do, it's not very good because I'm so out of practice. I often end up burning the rice a little and then missing the timing on adding the bouillon, so that the rice has burned bits and salty lumps of undissolved bouillon. Yuck.
So when Mazola asked me to try their new "Sobrecitos" line of seasonings, I though it would be fun to try and lighten up Mom's rice recipe.
The first thing I did was to use only a spritz of corn oil, from my handy dandy mister:
Then I sauteed the onions and added the rice. Since there was only a tiny bit of oil I had to keep a really close eye on the rice, so it wouldn't burn.
Then I added the water, tomato sauce and Mazola Sobrecitos packet. One packet is equal to one cube of bouillon, so no measuring necessary!:
I LOVED this stuff! It did not clump up at all!
After stirring and steaming the rice until all the liquid was absorbed I had DELICIOUS rice!!! The Sobrecitos packet gave the rice a yummy, rich flavor. It tasted so fattening but was no more fat or calories than plain steamed rice!And it tasted just like my mom's!
NACHO MAMA'S LIGHT MEXICAN RICE
1 cup long grain white rice (or you can make this recipe SIMPLY FILLING friendly by using BROWN RICE-it works!)
1/4 cup chopped onion
2 cups water
Spray of Mazola Corn Oil
1/4 cup Tomato Sauce (or tomato puree if you're SF)
Spray pan with corn oil (from a mister) and lightly saute onions until clear. Add rice and continue cooking on medium to high heat until rice starts to toast. Add remaining ingredients and lower heat to a simmer, cover and cook until all the liquid has been absorbed into the rice, stirring occasionally.
