The Great Taco Experiment! #30TacoTrucks30Days #TacoTrucksOnEveryCorner

Wow, has it really been that long?

How is everyone? Tired of the election cycle yet? Yeah, me too. And despite my last post, I've never been a person who goes all political on social media. I try not to push the candidate I'm voting for down anyone's throats and I really respect the people in my life who have different political views than mine.

This time, though, it's been a little...different. Though I have friends and family that span the political spectrum, one thing is very clear: no one I know personally, not one single person, no matter what their party affiliation, is planning to vote for the GOP candidate.

Most of my Republican friends* have even reached out to me and others about the rhetoric coming from the GOP candidate, assuring us that they absolutely do not support the vitriol and hate speech we've all seen on the 24-hour news cycle. They are standing up to their own party and holding them accountable, because they feel it's for the good of their party. And you know what? That actually helps.

*This is where I interject that I, personally, do not belong to any political party. I like to really research everyone's position before casting my vote, regardless of which party my vote represents. It's time-consuming but it helps me sleep at night.

Anyhoo-as most of you are aware, this happened a couple of days ago:

Like many of you, my first thoughts were:

1. "Dominant Culture? WTF is that supposed to mean?"

and

2. "Great. Now I want tacos."

and

3. "OMG, every corner? How can I make sure this happens?"

As many of you know, I live in San Diego. Which means I am acutely aware, perhaps more than most, of what this glorious, Trump-free, taco-filled future would look and feel like for all of us. And it is FREAKING DELICIOUS.

Upon further reflection, I realized how long it had been since I had actually purchased a taco from a taco truck. Waaay too long! And what if, heaven forbid, the unthinkable happens and THEY ALL DISAPPEAR? I would have been complicit, and I'd never be able to forgive myself. Also, to be honest, the "Latinos For Trump" guy's remarks really, really offended and hurt me. So I decided to deal with those feelings the best way I know how, by:

1. Poking fun.

and

2. Eating. Tacos.

I'd like to do what I can to keep a cheery attitude while also keeping the local taco truck industry humming. I decided to try and eat at least one meal a day, for 30 days, from a local taco truck. My friend Jen suggested the hashtag #30TacoTrucks30Days - and the Great Taco Experiment was launched!
Day 2: VERY convenient location!
Follow me on Instagram or Twitter (@shesnachomama on both) to see all the amazing tacos (and more) I will be eating!

And stay tuned here on the blog to see what a month of Taco Truck Cuisine does to my waistline. Kind of like "Supersize Me" only more delicious, less dangerous (I think?) to my health and with better makeup. That's right, I will be posting RESULTS of The Great Taco Experiment on October 2! Until then...

Have you ever enjoyed taco truck tacos? They taste like freedom.

VIDEO: Easy, Shortcut Vegetarian Slow Cooker Chili

Happy Sunday, everyone!

Do you have company coming over to watch the Oscars? This is the first time in years that I've actually seen some of the nominated films. This year I saw Gone Girl (hear our Book VS Movie podcast on it HERE), The Grand Budapest Hotel (loved!) and The Imitation Game (also loved, #Cumberbitch). Go me!

If you have friends coming over and want to whip up a simple crowdpleaser, try this chili! You can throw it in the slowcooker on high for 1-2 hours, or low for 4-6 hours or just heat it up on the stovetop. It came out YUMMY. I've had so many requests for cooking videos! This was surprisingly easy, so I'll definitely be doing more-even though I woke up my son. Maybe next time I'll even change out of my pajamas!

In case you missed it, here's the review of the Ninja 4-in-1 Cooker I did back in December. I still haven't taken it off my counter.

If you need something to listen to while cooking, check out our latest Book VS Movie. We discuss High Fidelity. Because John Cusack, Jack Black, Lisa Bonet!

Quick what are your Top 5 favorite movies of all time?

VIDEO: Where's YOUR Cheeseburger?

Hello all!

Had a "forehead slap" moment this afternoon and thought I'd share.

That burger was FANTASTIC. And I didn't have to spend any money!

Doesn't always seem like the things we most desire are things we actually already have?

HAPPY HUMP DAY!

VIDEO: A Day on Simply Filling / Simple Start

Hola Amigos!

You asked for it, and here it is-an entire day's food on Simply Filling. This would also qualify as "Simple Start", FYI.

UPDATE: Had my employee weigh-in this morning and, after only 3 days on Simply Filling, I'd lost TWO of the three pounds I gained at Fitbloggin! YAY! I'd still like to lose another 4-5 pounds this summer, so I'm sticking with SF/SS for the time being.

RECIPE REDESIGN: Claire Robinson PUMPKIN GINGER TART

I have given this recipe to so many people in the last week that I thought I should just post it here! I saw it on "5 Ingredient Fix" last week, I love Claire Robinson!

I gave it a shot and, despite being the worst baker in the United States, it came out DELICIOUS. So I put it into the Weight Watchers Recipe Builder (available to WW members on eTools) and, for 12 servings,  it was 8 pointsplus per serving. Which...didn't quite cut it for me.

So I made a few swaps. And OK, I added a sixth ingredient. So here's MY version of this tart:

Nacho Mama's SIX Ingredient Pumpkin Tart

Preheat oven to 350 degress

THE CRUST
-1 cup crushed ginger snaps
-1.5 cups crushed FIBER ONE CEREAL (the original one, that looks like twigs)
-6 tablespoons LIGHT butter

Mix butter with crumbs and press into your 12-inch tart pan and bake for 10 minutes

THE FILLING
-1 can (15oz) pumpkin puree
-3/4 cup FAT FREE sweetened condensed milk
-2 egg yolks

Mix all three, pour into tart crust and bake for 30 minutes.

Looks gorgeous, tastes YUMMY and...only THREE pointsplus per serving!!!

That's how I roll.

HAPPY THANKSGIVING WITH EXTRA CHEESE!

MYTHBUSTING DINNER! Cheaper Than Drive-Thru?

Hello all! This afternoon I got the biggest hankering for a cheeseburger and fries-ever get one of those?
The drive thru? Not for me, thanks!
I had plenty of Weight Watchers pointsplus left for the day (not to mention the week) and yes, I could TOTALLY have hit the drive-thru without destroying my diet for the week.

HOWEVER-when I stopped and thought about it I realized that, since my local supermarket it actually closer to my home than the nearest fast food joint, it would actually be faster to pick up all the ingredients and cook them at home than it would be to drive all the way to the fast food place, wait in the rush hour line at the drive-thru, order, pick up the food, drive it home and serve it to my family. Who knew?

Something else, though. Not only was it faster, it was (of course) healthier and also...

WAAAAAAAY CHEAPER!!!

RECIPE: 1PointPlus Cafe Gel-Latte! (aka "Coffee Whip")

By now many of you know that I am a collector of vintage flotsam in general and vintage Weight Watchers memorabilia in particular. I especially love old cookbooks (WW or otherwise) and am known to spend many a lazy Sunday afternoon reading through my treasure trove of ancient culinary tomes, sipping iced coffee and giggling at the photos.
The Motherlode: My 1st edition copy of the ORIGINAL 1966 Weight Watchers cookbook
